Ice cream for breakfast??? Hell yeah! Really, I’d eat this yummy banana nice cream for any meal of the day; it’s so delicious and incredibly filling! And, it tastes way better than real, dairy ice cream. I also added a delicious salted caramel sauce on top to give it a little extra something.
For this recipe you’re going to need a blender. I use a magic bullet and I would NOT recommend doing this. I’m on my fourth magic bullet because I keep breaking them trying to blend too many frozen things. (Yes, I know, I need to invest in a better blender, I’m working on it.) This is my disclaimer that I take no responsibility for fallen blenders if you attempt this recipe. The safest way to go about this is with a high power blender such as a Vitamix or a food processor.
You’ve been warned; now let’s get to the good stuff
For the nice cream:
-frozen bananas (I use 4-5 for one serving)
-a splash of almond milk (seriously, just a splash)
For the salted caramel sauce:
-pitted medjool dates (6 dates makes about ½ cup of sauce)
-a pinch of sea salt
-water (again just a splash, you’ll adjust as necessary)
-optional; vanilla extract
- Making the nice cream is very straightforward. Place your frozen bananas and splash of almond milk or other non-dairy milk in a blender and blend. Adjust the amount of milk as necessary, just remember you want the final product to be a thicker, ice cream consistency.
(You can always add extra thing to your ice cream to up the flavor such as peanut butter or coconut!)
- For the caramel sauce you’re going to want to chop up the pitted dates to make them easier to blend. Then place them in the blender with a bit of water, sea salt, and vanilla extract if you’re using it. Again, you’ll want to adjust the amount of water as necessary here. You want the final product to be a sticky, syrup like consistency. (For reference, I probably could’ve added a little more water to mine.)
- Finally, scoop your nice cream into a bowl, top with your caramel sauce and voila!
