Recipe: Vegan Hot Chocolate

As the winter weather finally starts to fall in I can’t help but want to snuggle up next to the fireplace with a nice warm mug of hot cocoa and watch the snow fall…

And yes, you can still have your delicious hot chocolate as a vegan! I make this recipe almost weekly now, it is soooo good! Plus, it doesn’t taste any different from non-vegan hot chocolate-in fact, it might even be more delicious! This recipe is also super quick and easy, you’ll be able to whip up a hot pot of hot cocoa in under twenty minutes with minimal ingredients, minimal mess, and minimal clean up!

Here’s how I make my yummy holiday ready vegan hot chocolate:

Ingredients:

-almond milk or any other non-dairy milk beverage
-vanilla extract
-coconut extract
-vegan chocolate chips (I use the brand Enjoy Life)
-cane sugar
-shredded coconut

***I am really bad at measuring quantities in recipes, meaning I don’t measure at all. My style of cooking is eyeballing everything and tasting as I go, I recommend just being careful with the vanilla and coconut extracts because a little bit goes a long way with those bad boys!

Directions:

You can either make this recipe in the microwave or on the stove top, I personally find the stove top a lot easier and it’s a lot less messy.

Start by pouring your milk into a small pot over medium heat. Stir in the chocolate chips a little bit at a time so they’re easier to melt. You can keep adding more as you go until it gets to your desired level of chocolateyness!

Next, stir in the cane sugar. I like to use 1-2 tablespoons which still gives me a pretty sweet tasting hot chocolate, so if you want something a little less sweet try only 1 tablespoon or less.

Next add in a little bit of vanilla extract and a tiny, tiny drop of coconut extract. The coconut is completely optional, but I love the taste of coconut and I think it kicks up the flavour of this drink.

Now just let your hot chocolate warm up on the stove for a bit longer, stirring occasionally.

Finally pour it into your favourite mug and top with some coconut flakes if you’re feeling fancy!
